We use organic sheep milk of the highest quality as the raw material for our semi-hard sheep cheese. One of the challenges of sheep milk is its inherent seasonality. Through years of tinkering, our sheep milk producers have succeeded in producing a certain minimum amount of milk throughout the year, which means that soft cheese made from sheep milk with a short ripening period can be produced at the Gohl cheese dairy all year round. Organic semi-hard sheep milk cheese is a phenomenon. It doesn't matter whether it is sold after a few weeks or several months of maturing, it is simply delicious! Its ripening is significantly influenced by the cheese smear. Based on his observations and years of experience, our cellar master decides when and how intensively to treat the cheese paste on the wheels. The aroma develops from mild to strongly spicy and aromatically fruity as the cheese matures.
